Cava Parés Baltà Historic Brut Nature 2018 is a vintage Cava that leans into a more traditional, savoury style, made from a blend of Xarel·lo, Macabeo and Parellada grown in the hills of Penedès. The 2018 vintage brought good balance and freshness, giving the wine plenty of energy alongside its depth from extended lees ageing.
There’s a lovely mix of baked apple, citrus peel and toasted almond on the nose, while the palate is dry, creamy and finely textured, with a gentle saline note on the finish. Serious enough to drink at the table, but still wonderfully easy-going.
Excellent with jamón croquetas, grilled prawns, fried chicken or simply a bowl of salty Marcona almonds.

Vintage report
The 2018 growing season in Penedès was shaped by a warm, dry summer that put real pressure on the vines, particularly in August when heat stress threatened freshness in earlier-ripening varieties. Those who managed yields carefully and picked with good timing — not too greedy, not too nervous — were rewarded. Xarel·lo, the backbone of so much serious Penedès white wine, thrived where canopy management kept temperatures in check, producing fruit with the kind of acidity that gives the variety its real character. Macabeu was more variable, and Garnatxa showed the richness you'd expect from a hot year.
The reds from 2018 have real presence: concentrated without being overblown, with Cabernet Sauvignon and Garnacha both performing convincingly. The whites, particularly those built around Xarel·lo, have developed well in bottle and are drinking confidently now. Most of the serious whites have another three to five years in them if stored well; the structured reds comfortably until 2026 and beyond. Not a vintage that requires much patience — it rewards those who open a bottle sooner rather than waiting for a perfect moment.
