Made using the traditional method developed in Champagne, this terrific Parés Baltà Pink Cava is quite stunning, and it is by far the best rosé Cava we've tasted for the price. This modern blend sees the traditional Xarel.lo component of white Cava replaced by 38% Garnatxa, alongside the 32% Parellada and 30% Macabeu.

Vintage report
When you see NV on a bottle from Penedès, it simply means the wine is a blend of grapes from more than one harvest rather than a single vintage year. Producers here have long used this approach — partly out of tradition, partly because it gives the winemaker genuine creative control over what ends up in the glass. Rather than being at the mercy of whatever a particular summer decided to do, they can pull from different years to hit the same mark every time. For you, the customer, that means a wine you can rely on: the same character, the same balance, the same house style whether you're buying a bottle today or picking up another case next year. It's the winemaker's signature, bottled consistently — and in our view, that kind of quiet confidence deserves a little more respect than it usually gets.
