Ripasso began as a clever way to give lighter Valpolicella more depth in weaker vintages: the young wine was “repassed” over the rich lees of Amarone, gaining extra body, flavour and structure in the process.

At La Giaretta, the approach is more direct. The same grapes used for Amarone are selected for the Ripasso, simply harvested earlier, and no appassimento is carried out. The result keeps freshness while still delivering concentration.

The wine is aged for two years, followed by at least five to six months in bottle, which brings roundness and developing tertiary notes without losing energy. It’s a natural partner for robust main courses and a generous spread of cold cuts.
