Planted on south-facing slopes to catch cooling Atlantic breezes, this Sauvignon Blanc is all about freshness and flavour. The nose starts subtle, then opens up with vibrant notes of passionfruit, pineapple, and watermelon that carry through to the palate.
Zesty acidity keeps everything crisp and lively, while a warm, dry growing season led to smaller berries and beautifully concentrated flavours. The grapes were hand-harvested, gently handled to avoid oxidation, and fermented cool over 14 days. There’s no oak, but two months on the lees adds a nice touch of texture and complexity. A bright, expressive Sauvignon Blanc with plenty of character.

Darling sits on the Atlantic-cooled western fringe of the Western Cape, and 2025 is still very much settling into the record books as we write this — detailed harvest data for the season is not yet widely published. What we do know is that the Swartland and West Coast broadly experienced a warm, dry summer with the Benguela current doing its usual work of moderating extremes, and Darling's higher-elevation vineyards, planted largely to Syrah, Chenin Blanc, and Sauvignon Blanc, tend to hold freshness even when the interior bakes. Producers here have been quietly raising their game for a decade, so the quality floor is higher than it once was.
On the strength of what we have tasted so far, the 2025s from Darling feel composed and well-defined rather than overworked — the Syrahs have real grip and peppery drive, the Chenins a taut, mineral core that suggests patience will be rewarded. Most wines are drinking well now with some air, though the better reds will benefit from another two to four years in bottle. We will update this note as more detailed vintage information emerges.
