Non-Vintage in Burgundy might seem a bit of an oddity at first – after all, this is the region obsessed with terroir and vintage variation. But we find NV wines here serve a rather clever purpose. These bottles are blends of multiple harvests, allowing producers to smooth out the peaks and troughs of Burgundy's famously fickle weather. A grower might take their 2019, add some 2020 for freshness, then fold in a splash of 2018 for weight – creating something more consistent than nature alone would provide. It's particularly common with smaller producers who want to offer a reliable house style year after year, or with négociants crafting their signature cuvées. What you get is exactly that: reliability. The winemaker's personality shines through without the vintage lottery, giving you a wine that tastes recognisably like itself every time you open a bottle. Think of it as the producer's calling card – their way of saying "this is what we're all about" without Mother Nature having the final say.
