Domaine du Bicheron’s vineyards cover 53-hectares, stretching across the towns of Péronne, Azé, Saint-Maurice-de-Satonnay, and Viré-Clessé. The estate has been passed down through generations with a history dating back to 1889 when it covered a modest 3-hectares. The terroir is diverse, from the hallmark clay-limestone plateaux of Mâcon to the siliceous soils of Viré- Clessé. In 2018, Domaine du Bicheron earned the High Environmental Value (HVE) certification signifying their commitment to biodiversity conservation, plant protection strategy, fertiliser use management and water management.
Domaine du Bicheron’s Mâcon-Peronne undergoes no oak, resulting in a fresh Chardonnay. The Cremant de Bougogne is also produced entirely with Chardonnay grown in the chalky soils of the vineyards close to Peronne. Made in the same method as Champagne and left for 18 months on its lees in bottle to enrich the final flavour, it is fresh with a crisp citrus palate and lingering finish.
