Dougos' Meth’ Imon Acacia 2021 is a distinctive white from the foothills of Mount Olympus, showcasing the estate’s thoughtful, terroir-led approach. Native Assyrtiko, blended with a dash of Sauvignon Blanc, is fermented and matured in large acacia barrels, a deliberate choice that adds texture and aromatic lift without masking the fruit.
The wine is expressive and inviting, opening with notes of flowers, tropical fruit and sweet oak. On the palate it’s creamy and layered, yet never heavy, with Assyrtiko’s natural minerality and tension providing definition and drive through the finish.
This is an excellent match for grilled prawns or scallops, roast chicken with herbs, creamy seafood pasta, or lightly spiced Mediterranean and Middle Eastern dishes where the wine’s aromatics and freshness really shine.
