Domaine Hubert Brochard, Pouilly-Fumé Classique, 2025
Domaine Hubert Brochard, Pouilly-Fumé Classique, 2025
- White Still
- 75.0cl
- 13.5%
- Sauvignon Blanc
Hubert Brochard has been coaxing flinty, electric whites out of Pouilly-Fumé for decades, and this Classique bottling is the estate's calling card: Sauvignon Blanc grown on the famous silex and limestone slopes above the Loire, vinified with a light touch so the site does the talking. Expect none of the tropical exuberance some New World Sauvignon trades on, this is cooler, more mineral, and all the more thrilling for it.
On opening it's taut and bright, with citrus and gunflint doing most of the work, before a chalky, saline finish that lingers rather than shouts. Drink it young while that nervy energy is at its most vivid, and pour it generously with anything that comes from the sea.

Vintage report
The 2025 vintage hasn't happened yet — we're still firmly planted in 2024, watching this year's grapes ripen along the Loire. While we'd love to peer into our crystal decanter and predict what nature has in store, even our most enthusiastic soothsaying has its limits. What we can tell you is that the Loire continues to deliver some of France's most thrilling wines, vintage after vintage, from the mineral-driven Muscadet of the Atlantic coast to the profound Cabernet Franc of Chinon and Bourgueil.
For now, we're busy celebrating the brilliant 2022s that are drinking superbly, the structured 2020s that reward patience, and the occasional treasure from earlier decades that reminds us why Loire wines age so gracefully. Check back with us in late 2025 when we've actually tasted what the vines produce, rather than what our imagination conjures. We promise the wait will be worth it — the Loire rarely disappoints, and when it does deliver, we'll be the first to tell you exactly why you should be excited.
Tasting Notes
AppearancePale lemon with a faint green tinge.
NoseCrushed stone and gunflint lead, backed by grapefruit zest and a whisper of elderflower.
PalateTaut and precise, with green citrus and a chalky texture that keeps things tightly wound rather than fruit-forward.
FinishLong, saline, and smoky, with a mineral bite that keeps you reaching for the next glass.
Overall impressionA nervy, precise Pouilly-Fumé built for seafood rather than sipping alone.
Food Pairings
Along the Loire this would turn up beside crottin de Chavignol, the local goat's cheese whose tang mirrors the wine's own mineral snap. River fish like pike-perch in beurre blanc are a classic match, as are oysters and other shellfish straight from the Atlantic coast not far away. Locals also reach for it with asparagus in spring, a notoriously tricky dish for wine that Sauvignon's herbal streak handles with ease.
We think this wine would go well with
Serve well chilled, around 10-12°C, to keep that flinty edge sharp. No decanting required, this is a wine that wants immediacy rather than air. A simple white wine glass with a narrow bowl concentrates the aromatics without losing the freshness.
The vineyards sit on the steep, sun-catching slopes above the Loire near Pouilly-sur-Loire, where silex (flint) sits over Kimmeridgian limestone and clay. The flint is said to lend the wine its trademark smoky, gunpowder edge, while the limestone brings the backbone and freshness. A continental climate with maritime moderation from the river keeps acidity high and ripening steady.
Pouilly-Fumé is the Loire's flint-driven answer to Sancerre, sitting just across the river and sharing the same grape but rarely the same personality. Rules restrict production to Sauvignon Blanc alone, and the best examples lean smokier and more savoury than their Sancerre neighbours, a direct consequence of the silex-rich soils. It's an appellation that rewards patience with producers rather than price alone, since quality swings widely between a tired blend and a genuinely thrilling bottle.
