Chorey-lès-Beaune is famous for producing hearty, spiced, red Burgundies with a good deal of muscle and herbal-tinged, woodland berry fruit.

Domaine Tollot-Beaut takes Chorey's rustic side and gives it a bit of polish, endowing it with a lovely sheen of velvety texture and sophistication. With a mineral-driven freshness that nicely complements the polish, it also has all of the lavish fruit that the estate's thoughtful winemaking lends.

Domaine Tollot-Beaut is based in Chorey-lès-Beaune and this accounts for its relatively low-profile status and for the value it offers. This under-the-radar status doesn't stop it from producing fantastic Burgundies with the same artisanal, quality-dedicated mindset we always look for. They use no fertilisers, they keep yields low and they harvest by hand.

The 2021 growing season in Burgundy started badly and got worse before pulling off one of wine's great escapes. Spring frost in April devastated vineyards across the Côte d'Or, followed by a summer that alternated between biblical downpours and scorching heat. Many producers lost 50% or more of their crop to the frost alone, then watched hail batter what remained in some unlucky villages. By August, with rot creeping through rain-soaked vineyards, even the most optimistic vignerons were writing off the vintage.

What emerged from this chaos surprised everyone: wines with remarkable freshness and purity, if you can find them. The tiny yields meant those grapes that survived were intensely concentrated, while the September sunshine saved the day with perfect ripening conditions. We find the reds show beautiful fruit clarity without heaviness, drinking with an immediacy that makes them irresistible now but promising a decade or more of evolution. The whites are particularly stunning, with a mineral intensity that cuts through their richness. Yes, there's not much 2021 Burgundy about, and yes, it's expensive, but this is one of those vintages where disaster bred greatness.

Founded in the 1880s, Tollot-Beaut pioneered domaine bottling in 1921. Today they are helmed by fifth-generation winemaker Nathalie Tollot who employs traditional techniques to produce their artisanal Burgundies. They use no fertilisers, keep yields low and harvest entirely by hand. Based in Chorey-lès-Beaune, their holdings span Aloxe Corton, Savigny, Corton, and the Premier Cru Beaune ‘Grèves’.
