Le 2 de Romer du Hayot is a polished, contemporary take on Sauternes: generous and honeyed, yet lifted by real freshness.
Expect ripe apricot, peach compote and candied citrus peel, layered with acacia honey and a bright citrus edge. It’s unmistakably sweet, but beautifully poised – vibrant acidity keeps the palate lively and precise, never heavy. A natural with tarte tatin or blue cheese, though it’s equally enjoyable lightly chilled on its own.
The vineyards rest on classic clay-limestone and gravel soils, lending both richness and structure. The blend is 90% Sémillon for texture and honeyed depth, with 10% Sauvignon Blanc bringing aromatic lift and brightness.
