Astoria, Fervo Refrontolo Marzemino Passito, 2016
- Red Still
- 75cl
This is a sweet, velvety desert wine from Refrontolo in Italy's Veneto. Made from pure marzemino grapes it has good body with plenty of ripe blackberry and loganberry fruit flavours together with hints of cherries and a dark, chocolate finish. It works well with berry fruit puddings such as summer pudding or even with chocolate deserts, the darker and fuller the better. It has plenty of sweetness and good balancing acidity.
The grapes are picked by hand when they are slightly over-ripe to capture as much natural sugar as possible. They are then dried on straw mats at the winery to concentrate both sugars and acidity. Before fermentation the grapes enjoy a period of "soaking" at low temperature for 2 or 3 days to extract colour and fragrance from the skins then before fermentation is finished, the process is blocked to achieve a high level of residual sugar (120 grams per litre) Only around 1.5 kilos of grapes are produced by every vine and this quantity is further reduced by around 30% after drying.
