The Corte Adami Cimalta Soave Classico is a stunning shade of straw yellow with a subtle greenish tint. The aroma is delicate and floral, with ripe yellow fruit and a touch of chalky, citrusy notes. On the palate, this wine is refreshing and long-lasting, featuring a distinct minerality that is almost salty in nature, along with a wealth of ripe, citrusy fruit that persists through to the finish. Grown in the Castelcerino vineyard at the peak of the highest hill in the Soave Classico region, this Soave is a true expression of Garganega and a testament to the quality of wines grown in volcanic soils. With its higher altitude, it boasts a greater minerality and a zesty "nervosité" than the already exceptional regular bottling from Corte Adami.
