Chorey-Les-Beaune is famous for producing hearty, spiced, red Burgundies with a good deal of muscle and herbal-tinged, woodland berry fruit. Domaine Tollot-Beaut takes Chorey's rustic side and gives it a bit of polish, endowing it with a lovely sheen of velvety texture and sophistication. Domaine Tollot-Beaut's Chorey-Lès-Beaune has a mineral-driven freshness that nicely complements the polish, and all of the lavish fruit that the estate's thoughtful winemaking lends.
Domaine Tollot-Beaut is based in Chorey-Lès-Beaune and this accounts for its relatively low-profile status and for the value it offers. This under-the-radar status doesn't stop it from producing fantastic Burgundies with the same artisanal, quality-dedicated mindset we always look for. They use no fertilisers, they keep yields low and they harvest by hand.
With Burgundy being a very expensive commodity thanks to quite a few short harvests and the weakness of Stirling, it's great to find something that not only represents good value but also epitomises exactly what Burgundy should taste like. The abundance of spicy crushed raspberry fruit, perfect balance on the palate and a fresh, vibrant finish makes this wine a joy to drink now but it will certainly repay cellaring if you can keep your hands off it!
