The Henschke family has been making wine in Australia since 1862 when Johann Christian Henschke first planted a small vineyard in Keyneton. Today, winemaking is led by fifth-generation Stephen Carl Henschke. He had retained the traditional approach to red winemaking used by his ancestors while adopting modern viticultural practices. This approach involves handling the grapes gently, using minimal racking low sulphur, gentle fining and filtration. In contrast, his approach to white wine production has been strongly influenced by his studies in Germany. Careful handling of the juice brings out the fruits’ intensity while preserving the varietal character of natural grape flavours.
