The home vineyard near Tillington has south-facing slopes and greensand soils, while the Roman Villa site near Bignor is planted almost entirely with Pinot Noir on loam- and clay-rich soils. Other sites offer different aspects, soil profiles and microclimates, giving the winemaking team a range of components to work with when blending.\u003c\/p\u003e\n\u003cp\u003eRoebuck specialises exclusively in vintage sparkling wines, each made from a single year's harvest using the traditional method. Grapes are hand-picked and whole-bunch pressed, with individual vineyard blocks vinified separately. Some wines undergo partial fermentation in older Burgundian oak barrels, and the finished wines spend at least three years ageing on their lees before release, developing texture and the toasty complexity associated with traditional-method sparkling wine.\u003c\/p\u003e\n\u003cp\u003eSustainability is also central to the operation. Roebuck was a founding member of the Sustainable Wines of Great Britain certification scheme and focuses on reducing herbicide use, limiting pesticides and encouraging biodiversity in its vineyards.
